#celiacdisease is annoying. It’s easy for me to forget how serious my chronic condition can be until I experience external, obvious, symptoms. Picture on the left is yesterday after gluten exposure - that’s all bloating. Picture on right is today.
It’s been a long and emotional last few days which left absolutely no time for food. After getting home from the fire, I was so excited to see my brand new air fryer! Perfectly healthy “fried” chicken and side of greens was exactly what we needed to refuel.

There was more than expected left over as my Dad and his girlfriend had to cancel at the last minute.
I took all the meat from the bones and strained out the broth, so this is some lamb meat with mashed sweet potato, sugar snap peas and green beans, mixed with a big spoon of the lamb broth (that jellied beautifully) and some salt.
Easy ugly food for the win!
Made a smoothie for the kiddo, I'm so glad she'll eat anything!
1 cup frozen mango chunks
3 handfuls spinach and kale
1 T flaxseed
1 T chia seeds
1 T pumpkin seeds
1/2 cup filtered water
1. Grind the flaxseeds, chia seeds, and pumpkin seeds in a grinder, just until it's the consistency of flour, set aside.
2. Put spinach, mango, banana, and flaxseed chia pumpkin seed mix into blender.
3. Add water and blend.
4. Pour into glasses and enjoy!

I’m all about caprese errythanng this summer! Whipped up some oven roasted chicken thighs marinated in balsamic and honey topped with garden fresh tomatoes, basil, and some fresh mozzarella all over a bed of cauliflower rice with sautéed bacon and onion. 👊🏼💥 #mealprep#chicken#caprese#gardenfresh

GF BBQ Chicken Quesadillas!! These make for a great summer dinner that everyone is sure to enjoy 🙄 What you'll need 👉 GF tortillas, cheese (I used marble), green and red peppers, onion, chicken, and your fave GF BBQ sauce (I used Sweet and Sticky Bullseye). I roasted my chicken the night before I made these so it was ready to go the next day. What you do 👉 Add a little bit of oil to a pan and sautée chopped peppers and onion. Once cooked put chopped roasted chicken breast into the pan and add enough BBQ sauce to coat the veggies and chicken. Cook this in your pan for approx. 5 min. Now start making the quesadillas! The tortilla may still be slightly frozen which is fine! Place some shredded cheese on the tortilla, then add your chicken and veggie mixture, top with more cheese and put another tortilla on top. The cheese acts as a glue to hold the two tortillas together. Place a peice of tinfoil on top of the quesadilla that is big enough to cover it. Then place a heavy oven safe pan on top to press it down. I used a cast-iron pan. Bake in the oven for 10min at 450 degrees and serve while the cheese is still melty!

HEALTHY SPICES & what great things they can do for your body. 🤸🏼♀️ I LOVE to try new spices and use them in my cooking, my smoothies & even just to sprinkle on raw fruits or veggies. Ginger, mint & cinnamon are a couple of my favorites. ❤️ Mint is great to add to water and tea. Ginger is a key ingredient in Thai and Asian cooking, which I love. Cinnamon is great on raw apples or bananas, great to add to oatmeal and I almost always put it in my daily Superfoods shake ✨
