Sorry I've been MIA this summer. Took a class online and got my college degree, and have been studying for my swedish driver's license, and working like crazy. Have been eating. Haven't been taking any pics of anything though.

I’m so thankful for Elsa. Not ONCE has she EVER complained about eating Gluten Free Vegan food with me. I cook it & she eats it. Last night & today was curry. 😍 We go out to eat & she orders GFV food cuz she knows I will eat her left overs. ❤️ Getting on a Vegan diet literally saved me. No joke. I’m not exaggerating. Earlier this year I had all sorts of health problems. Within one week of becoming a Vegan it showed up in my blood work that I was getting better. It even showed in my face. My doctor was shocked how quickly this diet change was helping me. He told me to stick with it. I’m thankful for the people who are nice to me about my diet change. Some haven’t been but whatever. I don’t care. I’m just thankful for the ones who have my back. 🙌🏼 I love you guys. On hard days I go in our back room at work & find a box of GFV cookies for me that someone has left for me. On a regular basis. 💖 My Mom will text me & be like “Hey! I got you your favorite GFV ramen noodles!” Or “I bought you some GFV treats.” Or “I found more GFV food for you that I think you’ll like!” And she always makes sure there’s something I can eat at dinners. My friends make sure when we go out to eat I can get something there too. Like all of my people get me. 😊💙And I am sooooooo thankful for their support & non-judgment! Over the last 8 years I have truly learned the power of FOOD!🤩 At times a diet change is necessary. Listen to your body. It will speak to you. Take care of you & watch what you eat. I joined RunClub so I could learn how to run #bucketlist. However, I never thought Tuesday nights would become a night I get excited about. Meeting so many amazing people, and feeling apart of a community is the biggest reward - and I am only three weeks in. Surprised the hubby with some comfort food items that he can eat with his celiac disease and T1 diabetes (in moderation of course) by spending about $1,356.27 on 5 items...

Soy una fan acérrima del pimentón porque pucha que es rico, sano, barato, bajo en calorías y rico... ya dije rico? jajaja les dejo esta mini receta espero que se animen a probarla.
- 1 pimentón grande (en la feria están a $300 y en la Vega a $250 prefieranlos porque en el súper los he visto al doble)
- 1/2 taza de proteína de soya ya hidratada
- media zanahoria
- 1/4 de pimentón rojo
- sal de mar
- aceite de oliva, como siempre yo prefiero el de @lasdoscientas - 4 champiñones pequeños
- 1/4 taza de porotos negros cocidos
- queso para gratinar si lo desean
- En un sartén colocar soya, pimentón rojo, ajo, sal, aceite y pimienta y saltear
- En otro sartén saltear los porotos negros con pimienta, sal y aceite y un poco de cilantro picado más ajo
- Una vez listos los rellenos partir el pimentón piel a mitad sacarle las semillas y agregar los rellenos (cada uno en una mitad) agregar queso si desean y champiñones.
- Hornear los pimentones rellenos a temperatura media (180°c) por 10 minutos o hasta que el pimentón quede calentito pero aún crujiente y listo, muy simple y riquísimo! .

First big event with #celiac. This is hard when you gotta share rest-stops with gluten-y buddies For 100+ miles. Packed all lunches, dinners and snacks for refueling every 12 miles but still somehow ended up flaring the first night. Cross contamination? Poor choice of cycling snacks? Handshakes? Easy peasy lunch today was some pasta made out of green lentils + cauliflower + parsnip & my spinach almond ricotta with sundried tomatoes.
Tag a friend who loves ricotta & grab the ingredients below! You can use the ricotta on pizza, pasta, lasagana, or even on crackers 😋 .
Vegan Spinach & Almond Ricotta
1 (14 ounce) package of firm tofu
1 cup raw almonds
3/4 tsp salt
4 tbsp nutritional yeast
1/2 tbsp garlic powder
1/2 tbsp onion powder
1/4 tsp pepper
3 cups chopped spinach
1/2 cup unsweetened almond milk

Dinner: spaghetti squash bake, it has chicken, bacon, broccoli, alfredo and topped with cheese. The alfredo sauce is from aldi's it's the first gluten free one I have found. I usually make it from scratch but jarred is easier to count calories. It was super good and a generous portion of 345 grams was 305 calories.

i got one maybe a month ago, and i can honestly tell you i have craved mustard since. and ya girl don’t like mustard so you already know 👍🏻🔟/🔟 all the celiacs know what good bread is vs bread that will simply just do. THIS bakery has really got it going on.
