having a dad who is passionate about food used to be the biggest curse. in the depths of my eating disorder being around his cooking made my heart jump into my throat with anxiety. food was the enemy, and so was he.
today, i’m extremely grateful for his love of food. instead of locking myself in my room when my dad cooks, i’m hovering over him as he chops onions, stirs a sauce, or boils pasta. to say things have changed is an understatement!
anyways, i’m here with yet another recipe of my dad’s (his grandmothers actually!) that i’ve been loving lately. it’s a cold dish thats simply roasted eggplant, celery, capers, olives, and tomato sauce all cooked together and served chilled. since we grow our own eggplants and tomatoes this dish has been on repeat! i love pairing it with some fluffy quinoa and a toasted buttered slice of @tallulahalexandra grain free coconut almond bread (same bread from my stories this AM). both my dad and my mom come from big traditional italian families and are constantly making dishes that have been around for decades. tradition and culture are so important! ▪️▪️▪️▪️▪️▪️▪️▪️▪️▪️▪️

1/2 cup cashews
1/2 cup water
Juice of 1 large lemon
2 tbsp olive oil
Handful fresh basil
1 garlic clove
1/2 tsp sea salt
Few cracks black pepper
1. Blend all ingredients on high in a powerful blender until smooth. Optional: add more water for a thinner sauce if desired.
2. Taste, adjust seasonings, serve or store in an airtight container in the refrigerator.

True life: I’m a Shakshouka addict. This one is loaded with kale, fresh cherry tomatoes, labneh, vegan mozzarella (I know, dairy + vegan cheese all at once but that’s what I had in my fridge), and fresh parsley.
To make, I sauté the kale in some olive oil first, add the kale, then pour in the tomato sauce along with the fresh tomatoes and labneh. Cover and cook for 3ish minutes or until eggs have just begun to set (check to see that whites are cooked but yolk is still runny). Top with cheese, parsley, pepper, crushed red pepper — or anything your heart desires! I also have a Shakshouka guide on the blog if you are lost!
When you make pulled pork for dinner, but you can't enjoy it in a bun because gluten is not an option, you make a loaded pulled pork baked potato. Butter, sour cream, pulled pork, cheddar cheese, salt and pepper. No complaints from this gluten free girl. #bbq#glutenfree#yum#cooking

SPICY CHICKEN PATTIES
1 lb. ground chicken
1 medium zucchini, grated and squeezed well of excess moisture (should be about 1/2 cup after squeezed out)
1 clove garlic, minced
3/4 teaspoon kosher salt
1/2 teaspoon black pepper
1/4 teaspoon onion powder
1/4 teaspoon cayenne pepper (optional; see notes)
1 1/2 tablespoons canola oil or coconut oil
Combine all ingredients (except oil) and stir until just combined. The mixture will be wet.
Form into small patties, about 1 1/2 inches wide, and place on a plate. It should be about 1/4 cup of the mixture for each patty.
Heat oil in a large skillet over medium-high heat.
Add patties, working in batches if necessary, and cook over medium-high heat for 5-6 minutes, then flip and finish cooking, another 4-5 minutes, until chicken is cooked through. Add extra oil or turn down heat if they are cooking too quickly or if you are doing more than 1 batch.
Serve and enjoy!
I use ground chicken but you could substitute ground turkey if you prefer.
I use the small size of my grater to grate the zucchini so the spreads are fairly small and get well incorporated into the patty mix.
These are just a tad bit spicy, with a subtle heat at the end. You can adjust the amount of cayenne to suit your tastes or leave it out altogether.
Ways to serve these chicken patties: with a dip (BBQ sauce, honey mustard, hummus, Ranch, etc.), in a lettuce or regular wrap or pita pockets, as sliders with toppings, on a salad or with eggs for breakfas
Red pepper pesto pasta!
I adapted @kpourkatrine ‘s recipe. .
- 2 bell peppers
- 3/4 cup sliced almonds
- 2 green onions, chopped
- 1 tbsp red wine vinegar
- 1/3 cup olive oil - 1 pinch salt
- 1 tsp chili flakes - 100g prosciutto - gluten free pasta
- 1/2 cup fresh parsley, chopped
- Parmesan cheese
- Preheat oven at 350F.
- Baked the bell peppers for 10 to 20 minutes until the skin begins to turn black.
- Remove from oven. - When cooled, peel away off the skin. - In a food processor, blend bell peppers, almonds, green onions, vinegar, oil, salt and chili flakes.
- Cook pasta in a medium sauce pan.
- Meanwhile, broil the prosciutto in the oven until crispy.
- In the saucepan, mix pesto mixture and pasta. - Top with fresh parsley, crumbled prosciutto, parmesan cheese and black pepper!

2014-2018 🆗 I love a good before and after! We never realise how far we have come until we turn around and see where we have been. On the left, 45kg. Starved myself, constantly chasing to drop the next kg but it was never enough. No ounce of muscle on my entire body and the only exercise I partook in was dancing at da clurb. I’d eat nothing but absolute shite - bags upon bags of Doritos and sour cream. I tried to avoid food until I’d cave and eat everything in sight. My head was a mess. Shortly after the photo on the left I went sober,
bought a bike, cycled daily and went to the gym 3-5x a week. I gained weight but didn’t see results for about a year. It was disheartening but I took solace in knowing I was doing the right thing and a few extra kg was nothing compared to the alternative. Now I enjoy my big ass quads and can beat strong dudes at wall sits (definitely not arm wrestles though)😅
