  • Fun fact: last week, I had my first EVER sushi 🙀🙀. Pre-celiac, I was a very bland meat-potato kinda girl. (I mean, I’d never even tried avocado, Japanese sweet potato, hummus or tons of my now favorite foods 😵). And after I was diagnosed with #celiacdisease, it was hard to find a safe #glutenfree sushi joint 🙈. So when I learned that Disney Springs’ @morimotoasiafla did #celiac-safe sushi, I had to order some veggie 🥒🥑🍆 sushi to go...which I actually ate the next day waiting for my flight at the airport. Airport food < @waltdisneyworld sushi 😜. My verdict? I’m definitely a fan! Creamy avocado + crunchy veggies + chewy rice + a lil’ wasabi and ginger = one happy Casey 🤗. I’ll be posting a full blog post about all the #glutenfreerestaurant options I tried at Disney Springs within the next week or so, so keep your eyes peeled 😉. What’s one new food you’ve tried lately? Here’s my travel food survival kit: . 🔸Sensible Portion Garden Veggie Chips: huge kid favorite and the canister prevents breakage en route. 🔸GF Harvest Gopacks: ✔️ breakfast 🔸Peeled mango: fruit that travels, yum! 🔸Thunderbird bar and Perfect bar: I bring a small plastic container that just fits these bars so they don’t get crushed. 🔸Yum Earth lollipops: I give these to my kiddo for takeoff and landing to help with the pressure change. 🔸apples: the perfect snack (I put these in a plastic bag with a napkin for easy eating and disposal). 🔸Plane lunch: hard boiled eggs (with a little container of mustard), carrots, celery, bell pepper, Crunchmaster crackers, and side of edamame dip. . #glutenfree #glutenfreetravel #celiacfood #travelsnacks #whatceliacseat #planesnacks

  • “Bread is so bad for you!” I hear it all the time. As a Personal Trainer and a full time Artisan Baker I would like to share with you the truth about the BEST and the WORST types of bread you can find on the market today. 1. PALEO BREAD, LOW CARB BREAD (NOT good) Super trendy and advertised as a heather bread alternative however after baking good fats turn into bad fats which can cause cancer. Plus it is not fermented which makes it harder to digest. 2. GLUTEN FREE BREAD (NOT good) ALL gluten free breads on the market have a lot of starches to help create lighter crumb. Starches same as sugars cause blood glucose spikes and can lead to type 2 diabetes and obesity. This bread have less dietary fibre and nutrients, making it less nutritious. 3. STORE BOUGHT BREAD (NOT good) Ingredient list is too long! There are things you have no idea what they mean. Most breads are made of WHEAT flour which used to be a good flour 20 years ago until it has been modified. Nowadays not much ppl can actually tolerate gluten, it causes all sorts of diseases, dementia is one of them. 4. SOURDOUGH (MAY BE good and MAY NOT) All depends on ingredients and method! Best made of 3 ingredients: flour, salt, water and natural fermentation. a) Ancient grains such as SPELT, KAMUT, EMMER havent been modified and are very low in gluten. b) Sourdoughs made with regular flours with addition of yeast are NOT good. 5. GLUTEN FREE SOURDOUGH (VERY good) GF Sourdough is only good if it contains no starches, no yeast etc which is pretty impossible to find. It is something I have been working on. The only bread which will not cause any sensitivities, very nutritious and can benefit weight loss. PM me if you want to find out more. 6. SPROUTED BREAD (VERY good) Can usually be found in Health Food Stores in refrigeration section. All grains have been sprouted which unlocks nutrients and makes them easier to digest.
