  • C A R B O H Y D R A T E S • are glucose containing foods like fruits, vegetables, dairy products, starches like grains, pulses, root vegetables like potatoes and sweet potatoes. • Our body’s tissues require a constant supply of glucose which is used as a fuel. The main source of glucose is dietary carbohydrates but in some cases of nutritional manipulation it can also be synthesised from protein. • If diet is low in carbohydrates, a greater percentage of dietary protein is used to provide glucose, which means less protein is available for the growth and repair of body tissues. Therefore, carbohydrates in diet have a protein-sparing effect, which is critical for people with chronic or acute conditions.   • W E E K E N D P R O T E I N • Recently some of my beautiful clients have asked me about chicken wings being a healthy option when it comes to protein. 🍀for the most part, it’s not the food itself, it’s what you do to is that becomes either healthy or detrimental to your health. 🍀there is nothing wrong with chicken wings ultimately - they are fantastic source of protein ( approximately 1 wing equals 1 egg in protein content) but they are also quite high in cholesterol. If you are on controlled (by which I mean supervised by a nutritionist) ketogenic or low carb/high fat diet programmes, then inclusion of wings is not a problem especially if you are trying to build muscle mass.🍀 If you are trying to manage weight, then other cuts like chicken breast become more appropriate as it is conveniently higher in protein, however, is much lower in amount of saturated fat per portion. 🍀And as always, the trick is in preparation/ cooking methods: avoid breading and deep frying wings by baking/roasting them instead. PRO TIP: avoid high calorie dips like smokey BBQ sauce (high in sugars) as well as spicy mayo (high in saturated fats) and go for soy sauce and yuzu seasoning or sesame oil and lime juice instead 👆🏻👆🏻👆🏻👆🏻👆🏻👆🏻 #kamillaschaffner

  • Kale Salad with Green Apples Cinnamon Vinaigrette and Pecan Salad #medicalmedium Challenge Hi Everyone! It's the first full day of Fall and I am enjoying an apple day. I am participating in the @medicalmedium #AppleChallenge. Today I went to my local farmer's market and selected Granny Smith Apples to make my Kale Salad with Green Apples. A recipe anyone can enjoy through the year. INGREDIENTS for the Pecan Parmeasan: 1/4 tsp. Himalayan or sea salt 2 to 3 tsp. extra virgin olive oil 1/4 cup pecans, toasted DRESSING: 2 Tbsp. unsweetened #applesauce 1/4 tsp. ground ginger 1 TBSP. grapeseed oil or extra virgin olive oil 2 TBSP. pure maple syrup 1/2 tsp. ground Cinnamon 3 TBSP. Bragg's Apple Cider Vinegar with "Mother" 2 TBSP. plus 1 tsp. #lemon juice or juice of a half a lemon ASSEMBLE: 1 bunch or bundle of kale, stemmed leaves and tear in bit sized pieces. Add 1 Granny Smith Apple, cored and cut into bite sized pieces. 1/4 cup dried cranberries, 1 8 -12 oz. can mandarin oranges, drained DIRECTIONS: 1. Pecan Parmesan: Preheat oven at 300 degrees F or 150 degrees C. In baking dish spread the #pecans in a layer and toast 7 to 9 minutes golden and fragrant. Take our of oven and set aside. 2. In a food processor, combine the cooled pecans, #nutritionalyeast, oil and salt and process until combined and crumbly. 3. Dressing: In a small bowl combine the vinegar, lemon juice, #maplesyrup, #cinnamon, oil, applesauce and ginger. Whisk together. 4. ASSEMBLE SALAD: Place kale in a large bowl and pour dressing on the kale. Massage leaves until fully coated with your hands. Mix in the #apple, #mandarinorange and #cranberries. Allow to stand and or refrigerate for 30 minutes. 5.   • Você já pensou em começar a construção de uma casa pelo telhado? Exemplo prático: homem, saudável, 20 anos, 70kgs, que vai iniciar na musculação e pretende ganhar massa muscular. Advinhem qual a primeira pergunta que ele faz? Sim, essa mesmo - "O que devo tomar de suplemento?" Reparem nessa pirâmide o lugar onde fica os suplementos: no topo; mas não é pq é o mais importante, ele está somente lá pois precisa de uma base toda para sustentá-lo, como o telhado de uma casa, entende? O alicerce da construção são as calorias, se você não estiver em superávit calórico, não haverá ganho de massa muscular sustentado. Se preocupe muito com seu alicerce, pois é ele que vai ser a base de seu físico. Em conjunto com o alicerce, erguem-se as paredes: os macros - quantidade de proteínas, gorduras e carboidratos; perceba que as paredes ainda são fundamentais para o processo - não erre. Se as calorias e os macros estiverem corretos, não se preocupe com os micronutrientes, na maioria dos vezes, pois em macros de boa qualidade há quantidades suficientes de vitaminas e minerais. Os micros são como o chão da casa, vem junto com a base. E por fim vem os horários/frequências das refeições, é como se fosse um acabamento - não tem importância se o resto estiver errado.   • A pre-diabetic client of mine emailed their recent blood work yesterday which showed fasting blood sugar went from 6.2 to 5.1 since their last three month check up (anything above 5.6 is considered high). The Drs were talking medication if it didn’t shift, so that’s why this client decided to give Ayurveda a go. They are versatile and taste delish but are you maximizing the nutrients that nature has blessed us with? . . 🔹The large majority of carotenoids (converted into vitamin A) are found greatest in the dark flesh closest to the peel. A part we usually disregard. So how do we maximize it? . . 🔹Using the “nick and peel” method. Here it is. . . 🔹1) Carefully cut in half lengthwise around the seed. 2) Rotate a quarter turn and cut lengthwise around the seed... you now have made quarter- avocado segments. 3) Separate the quarters and remove the seed. 4) Starting from the top, nick and carefully peel each segment to include the dark green outside flesh. . . 🔹There you have it!
