This weather has got me craving allll the warm foods, like this yummy Roasted Carrot & Butterbean Soup 🥕🧡 I love making my own soup in the colder months - it’s just so easy, so cheap and always tastier than the shop bought stuff ✨
For this warming soup you will need • 560g carrots • 1/2 onion • 800ml vegetable stock • 1 x 400g tin butterbeans • 2 cloves garlic • 2 tsp paprika • 1 tsp Turmeric • 1/2 tsp ginger • 2 tsp dried herbs • 8g fresh coriander 🧡 •
1. Pre-heat the oven to 180 degrees Celsius.
2. Peel and chop the carrot then place on a baking tray with a drizzle of olive oil and roast for 25 minutes or until soft.
3. In a saucepan over a medium heat add a drizzle of olive oil. Then chop the onion and garlic and gently sautéed. Add the roasted carrots to the pan along with the stock and all the herbs. Allow to gently cook for 10 minutes.
3. Add this mixture to a food processor (I use a @ninjakitchenuk one and it’s amazing!) along with 1/2 of the drained and rinsed beans. Blend until smooth!
4. Add this soup mixture back to the saucepan along with the remaining beans and fresh coriander. Stir well and allow to heat up. Serve with a drizzle of coconut yogurt and extra coriander 💚

طرز تهیه اسپاگتی با سس سبزیجات
مواد لازم: اسپاگتی شار شیر، روغن زیتون، سیر، سبزیجات (هویج، کرفس و ...)، قارچ، لیمو ترش، نمک و فلفل

So this morning I made a smoothie bowl, I looked in the cupboard and there was no granola 😵!! What is a smoothie bowl without granola?! So I decided to make my own. 🙌🏻 It’s so simple and so delicious. You can swap and change flavours and ingredients and the added bonus is there is so much less sugar than in shop bought granola. The main ingredient is gluten free oats, I used the @alara.cereals gluten free oats but you could always use rice flakes or quinoa flakes instead ☺️ My main sweetener was a little bit of brown sugar and some @thegroovyfoodcompany agave syrup 😋🙌🏻 I have already eaten a third of the jar. It’s so so good 😍😍! I decided to make a pumpkin spiced granola and the flat smells like cinnamon and nutmeg and I just feel so warm and cosy 😍! The recipe will be up on my blog this evening! Random AF, but after feeling like crap and spiraling downward for quite a while especially the month of September I was lucky enough to coincidentally have someone recently point out how large of a percentage of women end up suicidal from their birth control. This opted me to look into the VERY long list of side effects and it explains everything I've had going on with my body from nausea to my messed up appetite to chest pains to instantaneous migraines everyday and especially worsened anxiety/depression. Forreal I took a pregnancy test recently cuz I've NEVER felt sick like this. But the one that stood out most to me was water retention, which struck a chord cuz I swear I've been forming new rolls and looking puffier than usual on every part of my body. I'm happy to say that after stopping the pill and only "missing" 2 doses so far I am sleeping better and my towel fully wraps around me as to where it didn't last time I showered. I'm guna wait a month to see if any of the other issues go away like acne and body pain, as well as if I lose more weight and then I'll update. Here's to unorthodox non scale victories 👍

I'm really excited to try the rest of the new free from frozen range from @kirstys_official !! After trying the awesome vegan, dairy and gluten free pizza, I'm holding high hopes for the rest of the range! 😀
Alongside the pizza Kirsty's have launched three ready meals. These are Chicken Tikka Masala, Pasta Bolognese and a Butternut Squash Curry! The meals are all gluten,wheat and dairy free with low calorie counts. They also count as one of your five a day!!! .
I picked these up from @tescofood in Coatbridge, Scotland! They also stock the new pizza! Tesco have recently refreshed their frozen free from and vegan sections in my local stores with much more space being added. The free from range has slightly decreased with some products being discontinued but with extra space there's a good sign they are planning to add lots more in to the ranges. Hopefully more great product ranges like Kirsty's will be added and give us extra choice in this category.

Easy peasy lunch today was some pasta made out of green lentils + cauliflower + parsnip & my spinach almond ricotta with sundried tomatoes.

Vegan Spinach & Almond Ricotta
1 (14 ounce) package of firm tofu
1 cup raw almonds
3/4 tsp salt
4 tbsp nutritional yeast
1/2 tbsp garlic powder
1/2 tbsp onion powder
1/4 tsp pepper
3 cups chopped spinach
1/2 cup unsweetened almond milk
