  • Ciao ragazzi! Questo è il Cous Cous di verdure, una ricetta perfetta per un pranzo veloce o al sacco da portare in uni o a lavoro. Il bello di questa ricetta è che, se dovesse avanzare, si può conservare il cous cous in frigo per 2 giorni. INGREDIENTI PER DUE PERSONE: •1 carota grande •1 melanzana media •100gr di pomodori ciliegino •1 zucchina grande •1 cipolla rossa/scalogno •1 spicchio d’aglio •menta q.b. •zenzero fresco PER LA COTTURA DEL COUS COUS: •160 gr di cous cous •320gr d’acqua (q.b. per ricoprire il cous cous) •sale q.b. •1 cucchiaino di curcuma/zafferano in polvere PROCEDIMENTO: Pelate le carote e tagliate tutte le verdure a cubetti, lasciando per ultime le melanzane per evitare che anneriscano. Mettete uno spicchio d’aglio tritato a soffriggere insieme alle carote e lasciate a fiamma medio-alta con coperchio per 3-4 minuti, girando di tanto in tanto. Aggiungete poi al soffritto le melanzane, alzate la fiamma per altri 3-4 minuti e richiudete col coperchio. Se è necessario aggiungete acqua q.b. Mantenendo la fiamma alta aggiungete le zucchine e fatele andare per altri 3-4 minuti senza coperchio; dopodiché aggiungete i pomodorini con il loro sughetto e le cipolle. Salate e pepate a piacere, mescolate bene tutte le verdure e chiudete col coperchio. Fate andare per 8-10 minuti mescolando spesso, in modo che non si attacchino o asciughino troppo; in tal caso aggiungete acqua. Le verdure dovranno essere croccanti. Pronte le verdure, dedicatevi alla preparazione del cous cous. Prendete quindi una pentola con dell’acqua e portate a bollore. Intanto mettete in una terrina il cous cous, aggiungete un pizzico di sale, l’olio d’oliva e curcuma o zafferano a piacere. Una bella mescolata e versate così l’acqua nella terrina col cous cous; dovrà coprirlo a filo. Girate e coprite subito la terrina con una pellicola alimentare per il tempo designato sulla confezione del cous cous. Quando è pronto sgranatelo con una forchetta. Versate il vostro cous cous sgranato nella padella con le verdure, mescolate, grattugiate lo zenzero fresco e aggiungete qualche fogliolina di menta. Un giro d’olio e il cous cous è pronto! 😋 #cucinamediterranea #cucinaveloce
