Happy Autumn Equinox aka the first official day of Fall! 🍂🍁 I’m celebrating with these PUMPKIN PIE OATS that I’ve now made multiple time in the last week in stovetop as well as overnight from because they are THAT good! 🎃😍 I’m not minding the sweater weather or yummy pumpkin flavors fall is bringing, but is anyone else a little anxious about the days getting shorter and shorter? 😓🌅 I was looking at a sunrise/sunset chart for Seattle and it had me so sad. I love Seattle, but being so far north leads to some short hours of daylight in the colder months 😖🌞🌚 Currently, it’s getting to be dark still when I leave for work and then it looks like it’ll slowly change to being dark possibly when I come home too 🙈😕 Are you guys having any of the same anxieties?🌚
dEATS: (stovetop form, overnight oats would just use 1/2 cup almond milk)
1 cup unsweetened vanilla almond milk
1/2 cup oats
2 1/2 tbsp pumpkin purée
1/4 tsp cinnamon
Pinch of ground nutmeg
Pinch of ground cloves
Pinch of ground ginger
1 tbsp pure maple syrup
2 scoops @bulletproof collagen
@siggisdairy vanilla yogurt + banana coins + @georgiagrinders almond butter + pumpkin seeds + cinnamon
Happy Friday!! This week went by super fast for some reason 🤔 well, at least for me. Luckily the sky cleared up today (yay!!!) so I've been feeling much more energetic! Enchilada Spaghetti Squash 😋
•halve and roast spaghetti squash with olive oil, salt & pepper.
•filling- sauté yellow onion, bell pepper, and green olives with taco seasoning, and add some enchilada sauce once veggies are soft.
•taco roasted garbanzo beans.
•fill the halves and pour more enchilada sauce.
•bake for an additional 15 min.
•top with chives & avocado.
•so amazing! Love the squash season!

Yes I LOVE #chickennuggets. Yes I eat fast food. Yes I am a dietitian. Yes i am #antidiet and believe that #allfoodsit! Oh and my wedding is in 6 days! And these chicken nuggets and fries gave me the perfect fuel to power through some last minute wedding errands today! Dietitians are sometimes thought of as "perfect eaters" or "disciplined"... but what is a perfect eater anyway? "Perfect eating" might also be known as "clean eating" which is extremely restrictive and rigid...being obsessed about eating "healthy" is actually known as orthorexia, which is a very common type of eating disorder that goes unnoticed because of how common it is in our culture today.
As an anti diet dietitian with the mentality that #allfoodsfit, I do not promote or personally believe in "clean eating," due to its restrictive rules and behaviors that have a significant impact on someones #relationshipwithfood. That being said, fast food NOURISHES the body just like any other food...as it contains starches, proteins, and fats: essential macronutrients that provide energy, build muscle and sustain immunity, and help you absorb nutrients! I'm not saying "go to town on fast food or eat it for every meal every day," but letting go of rules around food and what is "allowed" or "off limits" is FREEING! It's amazing to experience NO GUILT around food and genuinely enjoy it. I know I did today! Thanks, @chickfila

I was once a big coffee drinker. The moment I was tired I would reach for a black coffee.
The effect of this on my sleep, hormones and stress levels were intense. I was exhausted all the time, irritable, lacked clarity and bloated.
Recently I did 20 days of NO CAFFEINE, not for a diet related purpose but just to chill the [email protected]&k down.
The outcome = I slept like a baby, was so much more chilled and drank so much more water.
Caffeine in a small amount is beneficial, however if you’ve had your soy latte and feel flat a couple hours later reach for your water bottle! 💦

This simple tart is not too sweet, beautifully highlights the fruit of the season and is equally loved as a dessert, snack or even breakfast! 😍🙆♀️..
Truth be told, we struggled with what to name this treat. My Grandmother always called it a "Dutch Apple Cake" but it's not a cake in the traditional sense. Let me explain... It's a simple 7 ingredient pastry crust (reminiscent of a shortbread crust) that's low in sugar (only 1/4 cup!), low in butter and so yummy. 😋 The pastry dough is gently pressed into the bottom & around the edges of a pie pan or even a rimmed baking sheet. Then the apples are pressed into the dough, topped with a dash of cinnamon sugar and baked! ✨..
Whatever you name it, you'll call it a delicious and easy addition to your baking repertoire. There's a reason it's a longtime family favorite! 👌..

I had a client tell me she can’t give up her McDonalds Sausage Biscuit w cheese with Diet Dr Pepper. Cheap and delicious, she said.
I told her about a solution I found for my son a few months ago when he wanted breakfast sandwiches every day. We take 2 sausage patties, 2 eggs, and either these avocado mash cups or this amazing @primalkitchen Chipotle Lime Mayo instead of cheese. (Use the sausage patties as bread.) If you’re struggling with out of the box breakfast ideas, try this one. I promise, if you have a vice you “can’t” give up, let me try to give a “healthified” version. I welcome the challenge.

Today’s Dinner..I keep seeing recipes of cracked slaw..tried it and taste yummy but here is my version without the soy or sesame and instead of ground I made mine with chicken. Sharing is caring so here it goes...and yes I’m having a beer. Nutrition is about balance.
Warm Chicken crack slaw
6oz of chicken thin sliced
1 cup rainbow slaw
1/2 diced onion
1/2 diced pepper
1. Sauté onions and pepper with garlic until desired texture
2. Add chicken
3. In skillet sauté onion and pepper, minced garlic, and chicken until cooked. Add seasoning of choice. I added garlic, onion powder, paprika, and fresh cilantro and Himalayan salt and pepper.
Place on a bed of lettuce and tomatoes
Add avocado 🥑 if liked.
