  • Ratatouille by @conscious_cooking 💚 Recipe:⠀ Ingredients For the base: 2-3 fresh tomatoes, pureed with a pinch of sea salt⠀ 2 Tbsp olive oil, divided⠀ 3 tsp fresh herbs, finely chopped⠀ 1 shallot, finely chopped⠀ 1 garlic clove, finely chopped⠀ 1 Asian eggplant⠀ 1 long, skinny zucchini⠀ 1 long, skinny yellow summer squash⠀ 20 cherry tomatoes⠀ 1⁄2 orange bell pepper, deseeded⠀ Sea salt and pepper •Preheat oven to 400°F. Pour tomato puree, 1 Tablespoon of olive oil and half of⠀ the chopped fresh herbs into a baking dish. Stir in the chopped shallot and garlic.⠀ Season with salt and pepper.⠀ •Using a mandolin, or a really sharp knife, thinly and evenly, slice the vegetables. Make the slices thin, about 1/8’ (3mm) thick. The thinner, the better!⠀ •Make mini-stacks of about 20 slices in sequence. Arrange a few stacks at a time into the prepared baking dish in a concentric spiral from the outer edge to the inside, fanning them out a bit so that you can see the top 1/8” of all the slices. “Stand” them up a little, so you can it as many vegetable slices in as possible, but you may still have some leftover veggies. Save the smaller rounds for the center of the dish.⠀ •Drizzle with the remaining tablespoon of olive oil and season with more salt and pepper. Sprinkle the remaining chopped herbs. Cover the dish with a piece of parchment paper cut to it just inside the dish rim, directly on top of the vegetable arrangement.⠀ •Bake for 40 minutes -1 hour (depending on how thick your vegetable slices are), until vegetables are soft, but not limp. I’ve been digging this homemade cilantro lime jalapeño 🌶 hummus lately! It’s sooo good as dip, as a pasta sauce or even just straight from the container with a 🥄. NO SHAME.   • Wrapping things up this Wednesday with one of my FAVORITE combos... that’s on repeat over here 👉🏼 tuna egg white salad! 😍 . So this begs the question... Does it matter if you eat the same things over and over?! . Studies say.... NOPE! 💯🙌🏼 . In fact, new guidelines say that QUALITY is more important than diversity when it comes to what you eat! ☝🏼🤓 AND having an extremely varied diet can actually DELAY feelings of fullness and satisfaction... leading you to always craving more! . How that food for thought?! 🤔 . So I had this lunch 2 days in a row and I don’t hate it! 😋 Tuna was always a favorite of mine growing up, so when I adopted more of a plant-based diet I really missed it... and my body craved it. But that’s how I knew that way of eating wasn’t the best for me. . Trust your body and listen to your body and you will figure out the rest... PROMISE! 🙏🏻 . Homemade Gingerbread Paleo Granola (Best I Ever Had) Ingredients 1 cup almonds 1 cup pecans 2/3 cup pepitas 1/2 cup coconut flakes 1 tsp cinnamon 1/2 tsp ground ginger 1/2 tsp salt Pinch of ground cloves 1/3 cup maple syrup 1/4 cup coconut oil 2 tbsp molasses 1 tsp vanilla extract Instructions 1. Preheat the oven to 300 degrees F. Line a baking sheet with parchment paper. Add the almonds, pecans, and pepitas into a food processor and pulse to break the mixture into smaller pieces. 2. In a large microwave-safe bowl, melt the maple syrup, coconut oil, molasses, and vanilla together for 45 seconds. Remove from the microwave, add in the nut mixture from the food processor, and stir gently. Add the cinnamon, ginger, salt, and cloves. Stir well to combine. 3. Transfer the granola mixture to the lined baking sheet and spread it out in an even layer. Bake for 20-25 minutes until golden. Remove from the oven and let cool completely. More than any other food, CARBS are by FAR the biggest food fear I hear from my clients, overhear people talk about on the subway (no joke!), and see restricted here on the 'gram. Maybe it's because most of my clients, like myself, were coming of age in the low carb craze of the 90s... OR because of the paleo, now keto, craze that severely limits carbs. 🙅🏻 . So why are so many people HATING on CARBS... and specifically POTATOES?! . Potatoes 🥔 are one of my absolute FAVORITE starchy carbs, not only 'cause CARBS, but because they're full of potassium, iron, and vitamin C too... making them especially perfect post-workout! 💪🏼 . А вы любите пэнкейки ? Как на счет пэнкейков из кешью и кокосовой муки? Делала значит я домашнее молоко из кешью и у меня остался жмых от ореха. Вот так вот и родился быстренький и вкусный рецепт завтрака. К тому же эти пэнкейки #безяиц #безсахара #безмолока. Сохраняйте скорей рецепт и не забывайте про лайк❤️ . . *Кешью жмых ( или мука или мелко перемолотый орех) - можно любой другой- 2 ст *Заменитель яйца- 10 грамм *Пол банана *Кокосовая мука- 3 ст.л *Мука из бурого риса ( или любая другая без глютена)- 3 ст.л
*Сода- 1 ч.л Банан размять вилкой, добавить заменитель яйца. Добавить жмых от кешью или перемолотый орех. Если используете перемолотой орех, может понадобиться добавить жидкость. В этом случае добавьте любое растительное молоко. Начините с 1/4 ст. Добавьте все оставшиеся ингредиенты. Замесите тесто. Я формировала мини пэнкейки руками и жарила на маленьком огне под крышкой, без масла, минут 5 с каждой стороны. Подавала в арахисовой пастой, кокосовой стружкой и бананами. Приятного аппетита!

The ingredients lists can be shockingly long and stacked with fillers! Look for the cleanest ingredients to avoid an upset stomach. As gluten intolerant/Celiac folk, we're trying to heal our guts while still enjoying the little things, like toast :) _ {RECIPE:} • 2 pieces of toasted @bfreefoods brown seeded bread (certified gf & vegan) _ Raspberry Toast: 😍 • Squeeze of honey mustard on toast (swap honey for maple syrup for my vegans!) • Mash fresh raspberries in a bowl and add them to toast • Optional: a light drizzle of honey or cinnamon! _ Sprouts Toast: 🌱 • Squeeze of regular or dijon mustard on toast • Chopped cilantro • Handful of sprouts of your choice, I did sprouted kale • Dash of salt and pepper • Optional: add sunflower or pumpkin seeds for a crunch!
