Eng⤵️Today, a recipe for a delicious dinner, which I showed you a few days ago in igspotlight. As usual, simply and tasty, pancake cake baked with spinach and ricotta😊 Recipe in English? Who wants?
Naleśniki usmażyłam wg mojego przepisu (przepis podawałam kilka razy), wyszło 9 sztuk.
Farsz: 1 dużą cebulę szalotkę posiekałam, poddusiłam na łyżce masła, dodałam 3 małe ząbki czosnku, 450 g mrożonego szpinaku w liściach, odparowałam do suchej masy, dodałam łyżeczkę czosnku niedźwiedziego, pieprz i sól do smaku (soli ok łyżeczkę), 1/3 łyżeczki świeżo startej gałki muszkatołowej, po przestygnięciu połączyłam z 4 rozkłóconymi jajkami i 250 g sera ricotta i 2 łyżkami jogurtu naturalnego. Naleśniki ułożyłam w patelni o grubym dnie lekko wysmarowanej masłem, tak żeby nachodziły na siebie dookoła mniej więcej żeby połowa wystawała do nałożenia na górę, nałożyłam farsz i złożyłam wystające boki naleśników na górę, przykryłam pokrywką i smażyłam ok 10 minut na średnim ogniu, potem odwrociłam przy pomocy talerza i smażyłam z drugiej strony.
Y’all have been killing it with these pumpkin chocolate chip protein muffins! So many of you have made them this year, it’s awesome! Best part about them is they come together in a blender and pack 8g of protein per muffin! Recipe is on the blog, just search pumpkin!
In other exciting news, Cashew learned a new trick (it’s in my stories)! He only learned in one day! Pretty much the best puppy ever (I tell him this multiple times a day in my dog mom voice 😂)

This is the result of simply saying YES. Saying YES to working out in my living room for 30 minutes a day, saying YES to an amazing meal plan that keeps me from overeating and saying YES to drinking a daily shake that tastes like dessert.
The greatest thing I have gained from simply saying YES after saying no for so long is not a lower number on the scale or fitting into clothes I haven't worn in years but a feeling I never knew before and that is the feeling of being comfortable in my own skin.

I'd already put the Sunday roast in before I realized I had no potatoes for mash, so here's the result of my improvisation: roast beef, #glutenfree gnocchi finished with the drippings and some @mountainoakcheese mild gouda (which tasted remarkably like last night's dinner 😋), and baked zucchini topped with parm.
Short ribs done in @instantpotofficial with blood orange cider and onions. Amazingly deep flavor and perfectly cooked!

2 weeks ago I broke out with THE WORST pimples, all over my face! My problem areas were my chin, my forehead and around near my ears. I couldn’t put my finger on it as I have been #cleaneating and i hadn’t changed my face routine- it was completely out of the blue! Then one morning I was making my usual #breakfastsmoothie and I wondered to myself whether it had something to do with the fact that I had run out of #spirulina ❓ So I went straight to the chemist and bought some more AND SURE ENOUGH my skin cleared up in literally a matter of days! I couldn’t believe that something I could take orally (and it’s so natural!) could have such a positive effect on my skin!! So if you’re struggling with breakouts- I highly recommend giving spirulina a go! It has really worked for me 😆

As promised to everyone who asked for it, the recipe for my (vegan, gluten free) creamy one pot pasta🍝 🤤 Sorry that I am not very good at writing recipes, but I tried my hardest😅
1. Heat 1/2 tbsp of olive oil in a large skillet over medium heat. Make sure skillet is large enough to fit the spaghetti. Smaller skillets work too, you just have to break the spaghetti in half to make it fit.
2. Add 5 cloves of garlic, 1 small finely chopped onion, 6-8 sliced mushrooms, 1 cubed red capsicum, mixed herbs, a pinch of salt and stir. Cook for about 2 minutes, stirring occasionally, or until the garlic is softened and the onion is turning translucent.
3. Add 2 cups of vegetable broth, 2 cups of nondairy milk (I use unsweetened almond breeze), and stir. Add 8oz of pasta (I used spaghetti but you can use anything!) and gently prod it around to submerge it under the liquid. If not all of it fits, you will need to gently push it into the pan after the submerged portion has softened.
4. Bring to a boil, then reduce to a simmer. Stir occasionally, gently separating any pasta that starts to stick together. Cook for about 20 minutes, or until the sauce has thickened onto the pasta and the texture is to your liking. If too much liquid is cooking off, reduce the heat a little bit, and add more nondairy milk.
5. Adjust seasoning to taste, and serve with fresh herbs and other toppings if desired. I topped with more herbs and some vegan parmesan.🌿

Chicken jalfrezi is up there as a curry house favourite and this version by Simon Rimmer shows it’s as easy as anything to make at home🤚
🙂Each serving provides 230 kcal, 31g protein, 4.5g carbohydrates (of which 4g sugars), 9.5g fat (of which 3.5g saturates), 1.5g fibre and 0.6g salt.

⏱️Cooking time - 30 mins to 1 hour👌
🔹2 tbsp vegetable oil
🔹1 onion, finely chopped
🔹2 cloves garlic, thinly sliced
🔹1 tsp chilli powder
🔹3 tsp ground turmeric
🔹750g/1lb 10oz skinless chicken breast, cut into large chunks
🔹400g can chopped tomatoes
🔹2 tsp ground ginger
🔹3 tsp ground cumin
🔹3 tsp ground coriander
🔹2 tbsp melted butter
🔹1 lemon, juice only
🔹basmati rice, cooked according to packet instructions
🔹6 ready-made chapatis or naan breads
🔹2 limes, cut into wedges
🔹2 handfuls chopped fresh coriander leaves
🔹1–2 red chillies, sliced
1️⃣Heat the oil in a pan and fry the onion and garlic over a low to medium heat for 4–5 minutes, or until softened😝
2️⃣Mix the chilli powder, turmeric and salt together in a bowl until well combined, then add the chicken pieces and mix well to coat. Add the coated chicken to the pan and fry for 10–15 minutes, or until golden-brown and cooked through✌️
3️⃣Stir the tomatoes🍅, ginger, cumin and coriander into the pan, then reduce the heat until the mixture is just simmering. Cover the pan with a lid and cook for 20–30 minutes, stirring occasionally and adding a tablespoon of water every so often if the mixture appears too dry
4️⃣Stir in the butter and add the lemon juice, to taste🍋
5️⃣To serve, spoon the chicken jalfrezi onto serving plates. Serve with rice🍚, naan and lime wedges on the side, then garnish with the chopped coriander and sliced red chillies👌

I get asked at least once a day how I find my motivation or how I stay motivated. Truth is, people have the wrong idea about what it means to be motivated. Motivation isn’t waking up and wanting to workout and eat clean. Motivation isn’t loving your workouts. Motivation is doing all the things regardless of how you feel. Motivation is NOT wanting to workout or make healthy choices but DECIDING to do it anyways. Motivation is not a feeling it’s a decision. The superfoods also help 👅👅
