Here is a delicious recipe for Keto Bread by @ruledme!
Makes 8 servings Keto Bread. Each serving comes out to be 134 Calories, 8g Fats, 3g Net Carbs, and 8g Protein.
-6 large eggs, at room temperature
-1 cup coconut flour, sifted
-½ cup flaxseed meal
-1 teaspoon salt
-1 teaspoon baking powder
-½ teaspoon baking soda
-½ cup water
-1 tablespoon apple cider vinegar
1. Preheat your oven to 350F and grease pan(s). Then sift the coconut flour into a mixing bowl.
2. Add remaining dry ingredients and whisk.
3. Add eggs, water and vinegar.
4. Stir until batter comes together. It will be thick.
5. Press batter into pan(s) and bake until cooked through, about 40 minutes.
6. Allow bread to cool in pan until just warm, then remove from pan, slice and enjoy.

It’s #transformationtuesday but also my 100th post! 🙀 Those first two pictures were my first transformation post. I was finally starting to not feel like a potato and at the time I couldn’t believe I was seeing that much progress. Fast forward to now 👉🏼 I still can’t believe the progress I’m seeing. It just doesn’t feel real, y’all. Majority of my life this was just something I could dream about. I knew I always wanted this but I had no idea how to achieve it. I’ve spent my life failing diet after diet AND THEN THERE WAS KETO 🙌🏼. Much like when I was saved, this feels like I’ve been renewed. Like this is my rebirth. And the crazy thing is.. I’m no where near finished. I can’t imagine how good I’m going to feel in January, much less a year from now if this is how good I feel NOW, mid journey. When I pray for me, I pray for y’all and I sincerely hope if you’re struggling with this that you hold on and just keep chugging along. Even if that chug is a strug, I promise it’s worth it. 💛💛💛 I’ve been trying to make my way through DMs. Y’all know I don’t like to leave you hanging! Some of y’all bring me to tears with your words and I’m forever grateful for each of you. 💛
Fun Shoulder Burner: Sword ⚔️ Pulls! Start with the core blaster bar resting on your inside thigh. In an athletic stance, shrug your shoulder, draw your elbow up, and flip bar to press laterally out and up. Focus on an engaged upper body to prevent opening up too far. Perform 4x10/side!
A simple microwave keto mug cake baked in a silicon pan. It automatically gives it a different feel just because it’s in a different shape. I love my $2 silicon loaf pan from Daiso. Made 2 batches of the recipe and cooked in a single loaf pan. Link is the original recipe
Below is the EDITED VERSION of the recipe Keto coconut chocolate mug brownie for one batch. However, feel free to use the original recipe on the youtube video. I find that this recipe lessens the “sawdust”texture of the cake)
1 tsp melted butter - i added more
2 tsp coconut flour
2 tbsp cocoa powder
2 tsp sweetener
1 tsp vanilla (or 2 tsp if u like)
2.5tbsp cream - i added more
1/4 tsp coffee melted cream
1/4 tsp white vinegar - added ingredient
1/8 tsp xanthan gum
pinch of salt
1/2 tsp baking powder (add last)
1. melt butter in the microwave. mix in, coconut flour and the rest of ingredients EXCEPT baking powder. taste if u are happy with the flavor. mix well until there are no more lumps. leave for 30mins to 1 hour, or even longer if you like. i find that this softens that “sawdust” texture that coconut flour has.
2. just before cooking in the microwave, add 1/2 tsp of baking powder. mix well. use emulsion stick to mix well.
3. microwave on high for 1 min or medium low for 2mins, but check at 1.5mins. top with toppings of choice! i dressed up mine by filling the inside with ricotta+cream mixture, and chocolate ganache on top. no measurements for those, i estimated to taste. tip: use a touch of gelatine to set your toppings/frosting.
top with ganache - microwave cream for 20 secs, take out from microwave then add a square of dark chocolate. wait for chocolate to melt, then whisk to combine. you may add stevia, vanilla or pinch of salt. i added a bit of sweetener.
optional: sprinkle with toasted almonds in salted butter (this takes the cake to a different level)

I am really trying to focus on developing healthy early morning habits. This morning I woke up at 4:15 and practiced guided meditation using the app Headspace (meditation is very new to me). I went to the gym and got in a 2 mile run and 30 minutes on the stairs. When I got home, I wrote out a list of new affirmations to begin using to help me empower myself to conquer my goals. Successful day so far, but I struggle most with CONSISTENCY, which to me is the most important key to building a healthier lifestyle. Here’s to working on that!

I cleared out my spices yesterday and consolidated, got rid of ones never used and put them back in an order that makes sense to me. (Who would put sweet baking spices in the middle of garden herbs?😱) That 8 shelf rack was on the back of the pantry door when we bought our house 25 years ago. I can’t imagine how I would cook without it. Sometimes a simple little organizing object can make all the difference. Except for @teenytinyspice, I buy most of my herbs and spices in the bulk section at @healthylivingvt and use various size Ball jars with small mouth lids so they can stack. Having a label maker really helps. I also have the tare weight on the bottum of the jars to get refilled so we don’t need to use any plastic bags. Here's a couple of side by sides for #transformationtuesday !! This dress, a 3x, I bought several years ago. It was one of the first dresses that I owned in my adult life. I thought that I actually looked halfway decent in it and it's basically the only dress that I would wear. It got to a point that my friends told me if they saw it me in it one more time they wouldn't let me wear it anymore until I found another dress that I liked. It got to a point at my heaviest where it was barely fitting around the chest and waist, the rest would flow but the top was tight. For some reason I decided to hang onto it and I'm glad I did! This dress is literally falling off of me now! If it wasnt for the halter I wouldn't be able to keep it up! This was a great eye opener to the progress that I've made. ⬇️115lbs
