pumpkin curry | chickpeas, spinach, coconut milk, cilantro, served with basmati rice
i’m back with another easy one-pot curry recipe! if you have cans of pumpkin purée lying around that you bought but never used... this one is for you. the pumpkin purée makes the curry thick and creamy, and it's packed with nourishing veggies (reheats well too— i can attest to this after eating the leftovers all week). best of all you don’t have to deal with cutting up a whole pumpkin !
EASY PUMPKIN CURRY
1 tbsp coconut oil (sub water)
1 medium yellow onion or 2 shallots, chopped finely
3 garlic cloves, minced
1-inch thumb ginger, minced
2 tbsp curry powder + 1 tsp garam masala + 1/2 tsp black pepper + 1 tsp ground turmeric + 1/2 tsp cayenne (optional; for heat)
2 medium carrots, chopped into small chunks
1 small sweet potato, peeled and chopped into small chunks
1 cup tomatoes, chopped
1 15-oz can pumpkin puree
1 15-oz can chickpeas, drained and rinsed
1 tbsp coconut sugar
1 tsp salt
1 13.5-oz can full-fat coconut milk
1.5 cup low-sodium vegetable broth or water
1 large handful spinach, rinsed
juice of one lime
In a large pot, heat 1 tbsp coconut oil over medium heat, then add in onion and cook for 3-4 minutes, until fragrant and softened. Add minced garlic and spices, and sauté for two minutes more. Add in carrots, sweet potato, tomatoes, pumpkin puree, chickpeas, coconut sugar, coconut milk, salt, and broth, and bring to a simmer over medium heat. Reduce heat and cover, cooking for 10-15 minutes, until sweet potatoes and carrots are tender. Turn off heat, add in spinach and cover until spinach leaves are wilted. Serve over basmati rice and add a squeeze lime juice before serving. (Instant Pot option: sauté all ingredients on SAUTE mode, then lock lid and cook at HIGH for 5 minutes. Let natural release for 10 minutes then open lid, add in spinach, close lid, and let sit for a few minutes before serving.)

Preheat oven to 375 degrees. Toss one sliced yellow or brown onion and 3 sliced bell peppers in some olive oil, salt, pepper and Italian seasoning. Bake for 20 mins. Bump heat to 425 after 20 mins. ✨
Meanwhile, slice 6 precooked Italian-style sausages (I used chicken sausage) into chunks and rough-chop a handful of basil. ✨
Add meat and basil, along with one large can peeled plum tomatoes (in their juice) to the pan. Roast for 10 more minutes. Serve hot with some crusty bread for soppin’ up the extra sauce 😉

Homemade Israeli middle eastern cuisines we grew up eating 🇮🇱 This week we will be featuring recipes from all these middle eastern classics! We'll start off with the first recipe of our homemade pita!
Pita bread: combine 2 cups of flour, 1/2 a teaspoon of himalayan pink salt, and about 2-3 cups of water depending on the thickness you like. Stir together and then pour the batter by thinning it out on a hot pan with olive oil so it coats the whole bottom of the pan. Flip when golden brown, should be around 3 minutes on each side. Then cut into triangles!
For dipping, we made:
madboocha (salsa-like dish), babaganoosh (eggplant dip), hummus (chickpea dip), and schug (spicy green sauce). Stay tuned for the recipes! 😜
