  • One thing I have to admit I can’t make consistently is pavlova - some work with that crisp exterior and glossy white sheen, and others crack and collapse (can I blame it on Auckland’s humidity??). I’ve (temporarily) given up on that dreamy tall circular shape and have gone for the much more forgiving slab- piled with honey roast peaches, chunks of hokey pokey (anyone else make this at school?) and mascarpone cream.   • Is it ironic that I’m a recipe developer by trade and I can’t follow a single recipe, even from my own cookbook? Or is that more like an Alanis Morissette style of irony aka not ironic at all? I can’t even tell anymore. I made the citrus, olive and feta salad with star anise maple dressing from the cookbook. I added cucumber slices which I marinated in dressing beforehand. I have no regrets. I have a tenuous at best grasp of irony.

  • How many different meals can you cook in a @butterpatindustries pan? Sounds like a riddle, but no, we’re really curious. We know @hseanbrock uses them at his @huskrestaurant restaurants, maybe he’s getting close to that answer but something tells us he’ll keep searching. So maybe the answer is really unknown? Either way we’ll continue searching as well. Tonight we offer grass fed, beef short ribs from a stones throw away, roasted under fig leaves. We can’t comment on the flavor yet but the smell coming from the oven is going to be hard to beat.

  • So tonight has been a busy one 😴 There just doesn’t seem to be enough hours in the day! Especially when it comes to baking! I needed something easy for dinner tonight that could cook away in the oven whilst I rustled up a triple layered cake. And it needed to be low carb (no time for the gym this eve!) I marinated some chicken legs in yoghurt, curry powder and turmeric, put them on top of a bed of courgette, onion, tomatoes, butternut squash and peppers then shoved it in the oven! 45 mins later I topped it with spring onion, yoghurt and coriander et voila! #winnerwinnerchickendinner
