| DEVILED POTATO BITES | EGG-FREE & DAIRY-FREE These Deviled Potato Bites are a fun finger food to serve at parties or gatherings. The optional black salt mimics the flavor and taste of eggs without any eggs being used in the recipe. Eggs are a problematic food for anyone with a chronic illness or symptom, so this recipe offers a fantastic alternative that is truly healing using potatoes. Even without the black slat, these Potato Bites taste wonderful and provide a great alternative to deviled eggs.
Potatoes are abundant in amino acids that specifically inhibit viral growth. They are high in glucose that provides substance to the liver, as it’s precisely what the liver relies on to keep strong. It also helps build up glycogen storage, the very resource that protects us against blood sugar problems, weight gain, fatty liver, and dirty blood syndrome. Potatoes keep the liver grounded and stable, giving us a good constitution.
Deviled Potato Bites
10-15 small potatoes
1 tbsp lemon juice
2 tbsp tahini
1/2 tsp paprika
1 tsp turmeric
1 tsp maple syrup
1 garlic clove, finely minced
1-3 tbsp unsweetened almond milk or light coconut milk, as needed
sea salt, to taste
black pepper, to taste
1 tsp paprika
Small handful of chives
1 tsp black himalayan salt - optional
Preheat oven to 350F. Line a baking sheet with parchment paper.
Cut the potatoes in half and place them on the baking sheet, cut side up. Sprinkle with sea salt and black pepper. Roast in the oven for 45-50 minutes, until cooked through.
Remove the potatoes from the oven and let cool for 10-15 minutes, until cool enough to handle. Using a teaspoon or melon-baller, scoop out the inside of the potatoes, leaving some space at the sides.
Place the scooped-out potato in a bowl and add the lemon juice, garlic, tahini, turmeric, paprika, maple syrup, salt and pepper. Mash until smooth and add a bit of almond milk if needed.
Place the mixture in a piping bag fitted with a star nozzle and pipe into the potato boats. Garnish with paprika, chives and black salt (if using). Serve immediately.

💗Homemade Vegan Pecan Pie!!! With NO tofu this time, and no corn syrup or refined sugar! The recipe is now up on the blog, or directly linked in my ig story @chocolatecoveredkatie .
Easy like Sunday morning ☺️🥞. I can think of MANY easier breakfasts than pancakes, although they’re pretty darn easy when they’re prepped ahead and popped in a toaster 🙌🏻. I’ve gone through several ‘easy breakfast’ kicks during my lifetime: in high school I was aaallll about Luna bars, which were eaten during first period and washed down with a whipped cream-laden white chocolate mocha I’d pick up at the coffee drive-thru on my way to school😬 . In college it was instant oatmeal every.single.morning — always combined with protein powder and topped with exactly 1 tbsp. peanut butter + 1/2 banana — no exceptions 😆. More recently it’s been avocado toast and toaster pancakes plates like this 👆🏻 — sometimes with fruit, sometimes with spinach (usually with both), and always with eggs 🤣. -
#whatsonmyplate: banana pancakes w/ a drizzle of maple syrup (I used the @birchbenders paleo banana pancake mix and prepared them according to package instructions, then frozen and reheated in the toaster 🍌) •• sautéed spinach w/ red pepper & parmesan •• crispy fried egg 🍳 •• 🥑🍓.
The breakfast I plate I ate this morning was not nearly as pretty as this one (in fact it wasn’t even a plate; it was oatmeal in a disposable paper bowl 🤣), but it filled me up just right for a quick workout and a long day of travel! 🙆♀️✈️ I’m heading back to Boise today to spend Thanksgiving with the fam bam☺️. Happy Sunday, friends!! ❤️😘 #pancakesunday
Q: what were some of your most memorable breakfast kicks? (I also went through a pretty committed pop tart stage circa age 10).

One double recipe of @thecastawaykitchen Made Whole chicken and dumplin’ soup! I use her soup base, and then added #paleo noodles (instead of the dumplings) but only because I LOVE noodles. The dumplins are also amazing! 🤗 You can’t go wrong with that book! 🙌🏻 #whole30#paleo#keto

It’s a shakshouka Sunday over here 😍. This is probably one my favorite breakfast recipes I’ve ever made—and it definitely helped bring me back to life this morning 🙏. Here are the deets, serves 4:
1 tbsp @chosenfoods avocado oil
3/4 large onion, chopped
2 cloves garlic, chopped
1 cup mushrooms, chopped
2 @applegate chicken sausages, chopped
1 can crushed tomatoes
1 tsp cumin
1/2 tsp chili powder
1/4 tsp red pepper
1/2 tsp fresh thyme
1/8 tsp salt
1/8 tsp pepper
Add your avocado oil, garlic, and onion to a frying pan and cook on medium heat for 3-4 minutes—until onion begins to soften. Add in your mushrooms and sausage, and continue to cook on medium heat for an additional 3-4 minutes. Pour in your crushed tomatoes, add your seasoning and let simmer on low heat for 10-15 minutes. Transfer into a greased cast iron skillet, crack eggs on top, and bake for 15-20 minutes at 375 degrees. Remove from oven and top with more fresh thyme, @bragglivefoodproducts nutritional yeast, avocado, and more red pepper flakes. Enjoy!
Paleo Mongolian Beef, Scallion and Ginger Stir Fry with cauliflower rice.

I wish I would have doubled it because it was so good. I added grilled sweet peppers to the mix of marinated steak, green onions, garlic and ginger. #paleo#whole30
How to elevate your pancakes?! 🥞
It’s no secret I love pancakes. You see them all over my feed😬
But because I like to eat them so often I love to boost up the nutritional value of them to make a healthy balanced breakfast 💕
These are made using @bobsredmill paleo flour which has a little more fiber and protein then your average stack of cakes and I followed the pancake recipe on the back👩🏻🍳
They are sooo good and grandpa approved 😉 I make them for him how every time he comes in from Florida cause he’ loves them lol
I also usually add a little collagen powder for a protein boost or ill have some eggs on the side 🍳
Then I top it off with some pure maple syrup or @lakantosweetener for a sugar free version. Happy Sunday 💕
Now I’m on the hunt for some dairy-free cream cheese to make @paleomg pumpkin cheesecake for Thanksgiving.
My biggest tip to anyone with food sensitivities is to bring/make something that you can have. Same goes for healthy dishes. Be the one to sign up to make the veggies, volunteer to make a fruit tray.
It not only takes the pressure off of your hosts but it makes sure you have some options that you feel comfortable with.
So who wants me to share the outcome of this amazing looking recipe?

HOMEMADE STEAK SANDWICH
Princess spoiled us for dinner with these homemade steak sandwiches.
All the toppings were made from scratch. The toasted homemade crumlet was lathered with lots of homemade capsicum butter and mayo, then topped with boiled beetroot, camarelised onion with homemade balsamic, lettuce & tomato ... a finished with lots of sliced steak!
On the side we had a pile of sweet potato fries
The capsicum butter was so good that you could (and King phat did) eat the by the spoonful!

As much as we love turkey, we’re also here for the sides. We love this simple roasted carrot recipe featuring @belcampomeatco lard (find it at our butcher shops!) from @anyafernald
Preheat oven to 450. In a cast iron pan, toss carrots with 2 tablespoons of melted @belcampomeatco lard to coat, then season with salt. Transfer to the oven and roast until blistered and tender, shaking the pan occasionally so the carrots brown on all sides, about 40 minutes. Serve hot or at room temp. 🥕

I’m sorry for being silent this month! I have taken some tome to enjoy our littles before they’re not little anymore! Yesterday we had their second birthday party and it was a sweet success! ✨ Be prepared for the BOMB Black Friday sells Young Living will be offering! 💥
Woke up this fine Sunday morning and realized “Hey, I don’t need to spend 5 hours doing school work today” because... I’m done!! 🎉 I finished my final classes for my Master’s of Science in Human Nutrition program this week. It has been 2 years of very hard work, waking up at 5 am most weekday mornings to get assignments done before starting work for the day, countless Sundays spent indoors studying instead of having fun outside, and hours of physiology, biochemistry, nutrition science, and biostatistics. I will apply for graduation in January, take a cumulative exam in February, and should receive my diploma shortly thereafter. I still have plenty of studying to do for the exam, but it felt so good to wake up this morning and have a lazy Sunday! I baked for the first time in ages (made some very imperfect but still delicious paleo pumpkin bars) and am heading out for a trail run in Boulder! Happy Sunday!
HELLO, IT’S ME!
Feeling better than I ever have before! I’m back on this account after a long hiatus... & so I thought I would share this delicious/easy lunch idea with you.
- egg whites + rotisserie chicken
- romaine lettuce, cucumber, red pepper, avocado
- red pepper flakes, salt + pepper

I grabbed some Satsuma Mandarins at Whole Foods this morning and decided to use them to make a dressing for this arugula salad with crispy @laquercia prosciutto, pear and mint. It was 👌🏻. Might even make it on Thanksgiving.
