These phytonutrients are produced by the plant to serve different purposes: to protect the plant, for communication, or to give the plant its colour...This is the case of the phytonutrient 'Lycopene' found in tomato 🍅 and responsible for its red colour. . Phytonutrients have been shown to have anti-inflammatory and anti-cancer properties, to protect our cells, balance our hormones and to modulate our immune system! Coming back to 'Lycopene' 🍅, studies have shown that it can prevent Prostate cancer, Cardiovascular diseases and male infertility. Amazing, isn't it?! . . We need to make sure we eat different colors of fruits and vegetables, so we can get all kind of different health benefits. How? Well, a good start would be to make this delicious salad, which is made of 5 differents colors (yellow, orange, red, green, purple!) . . 🥕 RAW PAD THAI RECIPE 1) Thinly slice or grate: courgette, red and yellow peppers, red cabbage, carrots and green onions and add to a large bowl 2) Chop a bunch of fresh coriander and add to the vegetables 3) Prepare the lime & peanut dressing - 3 tbsp smooth peanut butter,make sure it's 100% peanuts - 2 tablespoons of lime juice - 2 tablespoons water - 1 tbsp honey or maple syrup - 1 tbsp oil (olive or sesame oil) - 1 tbsp tamari or soya sauce - Salt and pepper to taste You can mix the ingredients of the sauce in a blender, or put them all in jar, close and shake well to get everything well mixed and smooth 😊. Final tip: add the dressing/sauce to the salad and leave in the fridge for about 10 minutes. This will allow the vegetables to get softer and the flavours to mix better!   • Happy Thursday beautiful people! I am so feeling this recipe-my best friend @lovetrotting came over yesterday and surprise surprise we were craving the same thing! Spring rolls are a mutual fave of ours, not to mention I had recently mastered a peanut sauce recipe and not only does it pair well with spring rolls but it makes the best pad thai! So be prepared cuz i'm basically like Spongebob giving out the Krabby Patty formula right now. How could I keep the dankness all to myself? Hehe...Here's how we did it! ~ ~ SPRING ROLLS ~ • First and foremost, working with rice paper is TOUGH, frustrating, and very tedious. Alas with practice and patience it only gets easier. 💘 Go to your local grocer, Ralph's always has them, and grab a pack of rice paper wraps. We used the brand Dynasty! • To activate them, warm up a bowl of water and let the wrap soak until it's limp-transfer to a flattened, DAMP paper towel so rolling it up is easier. (Using a plate or cutting board caused the rice paper to stick, and it sucks! 😖) • Cut up what you want inside into long, thin pieces. We used mango, tofu, rice noodles, cucumber, spinach, mint, cilantro, and avocado. Roll up, tuck in the two sides, and roll up the rest like a mini burrito! 🌯 ~ ~ PAD THAI ~ • Mix together: ~ zucchini noodles (spiraled or pre-packaged) ~ cucumber ~ tofu ~ cabbage ~ mushroom ~ green onion ~ cilantro/mint/jalapeño/avocado (optional) ~ pad thai or peanut sauce... ~ ~ *** PEANUT SAUCE *** ~ • 2 TBSP. chunky peanut butter • 2 TBSP. GF soy sauce or liquid aminos • sriracha to taste • garlic • shredded ginger (just a lil) • 1 TBSP. agave nectar • 2 TBSP. almond milk ~ ~ ~ I promise you...dip the spring rolls into the sauce and you'll disappear into a vegan black hole of dankness GUARANTEEEED. 🕳🌈✨ I hope you guys enjoy this as much as I do...on the regular! I low key live off of spring rolls, don't tell anyone! I hope you guys have a rad weekend full of lovin'. 💘

  • Delicious Rainbow Raw Pad Thai → Feeds 1 hungry person 😋 or can be shared by 2. ↓ RECIPE Vegetables 2 zucchini's spiralised, or peeled 1 carrot peeled 1 small red capsicum finely chopped 1/4 purple cabbage finely chopped 1 green onion diced Handful fresh cilantro chopped Pad Thai Sauce 2 heaping tbsp tahini (I recommend the @artisanaorganics as it's the only true raw tahini on the market) Zucchini 'doodles' (leftover parts after spiralising or peeling) 1 tsp tamarind paste (optional, but so yummy!) 1/2 garlic clove Few sprigs fresh cilantro Thumb fresh ginger 1/2 juice lemon Pinch cayenne pepper or chilli 1/4 cup water add more as needed to make creamy ↓ DIRECTIONS Add all the vegetables to a large bowl. Blend the sauce ingredients until smooth and creamy. The consistency should be fairly thick. Pour the sauce over the vegetables and mix thoroughly. Divide among two bowls (or eat it all to yourself) and garnish with extra fresh cilantro. Store left over sauce in the fridge and use within 2 days.   • So many of you msged me about this meal when you saw me making it on my insta stories a few weeks back. It’s a raw kelp noodle “pad Thai” I just threw a bunch of veggies that I had sitting in my fridge into a bowl along with kelp noodles and fresh basil. I made a mixed together cashew butter sauce (a couple tbsp cashew butter + 2-3 tbsp coconut aminos + 1 tsp sesame oil + lime juice + freshly grated ginger and garlic + chilli flakes) poured it over top the noodles and veggies, massaged it in and that’s it! I also threw in some tofu which I marinated in coconut aminos (literally just chopped it into cubes and let it sit in a bowl with the coconut aminos). Such an easy dish to make and takes about 5 minutes!   • Lunch today was Raw Pad Thai from @onenessfountain 🧡😋 As soon as I walked into this place, I instantly felt at peace. 😌 The restaurant is designed to look/feel like a temple—there’s even a fountain and speakers playing meditation music inside. The food was obviously delicious, but the environment here is what really took the sensory experience to the next level. Go here next time you’re in New York! 🌸
