Fruits and vegetables not only contain vitamins and minerals, but also some molecules called "Phytonutrients". These phytonutrients are produced by the plant to serve different purposes: to protect the plant, for communication, or to give the plant its colour...This is the case of the phytonutrient 'Lycopene' found in tomato 🍅 and responsible for its red colour.
Phytonutrients have been shown to have anti-inflammatory and anti-cancer properties, to protect our cells, balance our hormones and to modulate our immune system! Coming back to 'Lycopene' 🍅, studies have shown that it can prevent Prostate cancer, Cardiovascular diseases and male infertility. Amazing, isn't it?!
We need to make sure we eat different colors of fruits and vegetables, so we can get all kind of different health benefits. How? Well, a good start would be to make this delicious salad, which is made of 5 differents colors (yellow, orange, red, green, purple!)
🥕 RAW PAD THAI RECIPE
1) Thinly slice or grate: courgette, red and yellow peppers, red cabbage, carrots and green onions and add to a large bowl
2) Chop a bunch of fresh coriander and add to the vegetables
3) Prepare the lime & peanut dressing
- 3 tbsp smooth peanut butter,make sure it's 100% peanuts
- 2 tablespoons of lime juice
- 2 tablespoons water
- 1 tbsp honey or maple syrup
- 1 tbsp oil (olive or sesame oil)
- 1 tbsp tamari or soya sauce
- Salt and pepper to taste
You can mix the ingredients of the sauce in a blender, or put them all in jar, close and shake well to get everything well mixed and smooth 😊. Final tip: add the dressing/sauce to the salad and leave in the fridge for about 10 minutes. This will allow the vegetables to get softer and the flavours to mix better!

Please say Hello to my new favourite summer dish: Raw Pad Thai!
It is perfect, because
a) you don’t need to turn on the stove when you’re already too hot
b) it is put together in 10 minutes, so you can enjoy more of your summer evenings outside doing things
c) it tastes frickin delicious
Recipe? Thought so.
For 2 servings of ‘noodles’ spiralize (or use a potato peeler if you don’t have a spiralizer)
1 large zucchini
1 white radish or kohlrabi
Add a cup each of chopped cilantro & mint
For the sauce mix together:
3 generous tbsp sunflower seed butter (peanut is equally delicious)
Juice of 1 lime
2 tbsp sesame oil
2 tbsp Cocos Aminos (or tamari if you prefer that)
1 tsp maple syrup
Mix noodles with sauce and optionally top with avocado and sesame for some crunch.

It was way to hot to turn on the oven today...so this happened. Raw sweet potato & zucchini noodle pad Thai. Topped with slices of crunchy red onions, sesame seeds, sweet peas and a homemade organic peanut sauce that was seriously on point! ☝️Happy Heat Wave 🌊☀️😎

Sauce made with Sun-Dried Tomatoes, Dates, Seeds, Nuts and Spices with Zucchini Noodles
I ordered peanut butter powder last week with the idea of making a low-fat peanut butter sauce for something, and the other night I came up with this. It’s raw Pad Thai in rice wrappers. We placed each one in a leaf of butter lettuce (because the rice papers can be sticky), and then dipped it in more of the peanut sauce. It was so good, and my husband LOVED IT. In fact, he declared it “dinner of the week,” even though it was only Tuesday. (BOLD.) For the Pad Thai, I used kelp noodles, spiralized zucchini and cucumber, shredded carrot and red cabbage, and julienned purple radish and red bell pepper. Swipe for the peanut sauce recipe. I made it up on the spot and wrote it down immediately afterward, because it was a home run on the first try! Usually a recipe needs some finessing, but not this one. Try it, you’ll love it! 🌱🌱🌱 Oops - I wrote it down wrong - it was 8 tbsp peanut butter powder. I better fix that!

Vegan food whilst in Croatia! My family and I spent the week in Zadar and I got to try a few vegan pizzas, pastas, risottos, and had a special treat when visiting a completely raw vegan place at The Garden Lounge in Old Zadar! The food was amazing and I would definitely recommend visiting Zadar. 🍕🍟🍷🍝🥑☕️🥂🌱

Made this 100% raw Thai peanut noodle salad yesterday and it was so so yummy! 😋
My boyfriend had brought home some pad Thai the other day unexpectedly and felt inspired to recreate a raw version made with zoodles, purple cabbage, cucumber, and edamame!👩🏼🍳🌱
🌱1/2 cup almond or peanut butter -
🌱1 tbs fresh ginger (or 1 drop Ginger essential oil)
🌱1 1/2 tbs lemon juice
🌱2 tbs sweetener of choice -
🌱2 cloves garlic
🌱1 1/2 tbs sea salt or tamari (I used half this and used liquid aminos) -
🌱1 tsp Serrano pepper 🌶, diced (optional)
🌱1/3 cup or more of water for thinning

PAD THAI FRIDAY! ✨
Is it a thing? Can we make it a thing? I’m sure there’s got to be other Pad Thai fans who are with me 🙊 I did a one day juice cleanse yesterday, but broke it today. It’s a little hard to do longer ones when you work in a kitchen! (So many tummy rumbles!). I decided I’d eat raw and then do a few days of juice when I’m off work. I’ve been feeling a bit zapped with the colder (and darker) days upon us, so I’m combatting it the way I know best, which is a big dose of vitamins and minerals from all the juice and raw foods
This Pad Thai is made with zucchini noodles, a tahini based pad Thai sauce with lime, dates and chilli, and my homemade, turmeric activated nuts
While I’m talking about raw food and cold weather, one of my tips for anyone eating raw food in colder climates is to add warming spices to your food. Spices like cinnamon, turmeric and cayenne are all really good tummy warming spices ✨💛
