Farsz: 1 dużą cebulę szalotkę posiekałam, poddusiłam na łyżce masła, dodałam 3 małe ząbki czosnku, 450 g mrożonego szpinaku w liściach, odparowałam do suchej masy, dodałam łyżeczkę czosnku niedźwiedziego, pieprz i sól do smaku (soli ok łyżeczkę), 1/3 łyżeczki świeżo startej gałki muszkatołowej, po przestygnięciu połączyłam z 4 rozkłóconymi jajkami i 250 g sera ricotta i 2 łyżkami jogurtu naturalnego. Naleśniki ułożyłam w patelni o grubym dnie lekko wysmarowanej masłem, tak żeby nachodziły na siebie dookoła mniej więcej żeby połowa wystawała do nałożenia na górę, nałożyłam farsz i złożyłam wystające boki naleśników na górę, przykryłam pokrywką i smażyłam ok 10 minut na średnim ogniu, potem odwrociłam przy pomocy talerza i smażyłam z drugiej strony.

  • Braised Stuffed Tofu with Napa Cabbage Finally I’ve got the recipe written down, almost forgotten the measurements after awhile... . #lazyjenrecipe Serves 4 Ingredients: 2 pieces firm tofu 200g each, sliced into 8 portions per piece of tofu 200g minced pork 1 stalk green onions, chopped 1 stalk green onions, cut into inch long 2 cups sliced Napa cabbage . Seasoning for minced pork: 2 tbsp light soy sauce 1 teaspoon salt 1 teaspoon white pepper 1 tbsp sesame oil 1 tbsp tapioca flour or corn flour . . Seasoning for gravy: Light soy sauce Oyster sauce Salt White pepper 1 tbsp corn flour 3 tbsp water . . Others: Vegetable cooking oil Water . . Method: 1. Combine all seasoning with minced pork and chopped green onions. Mix well. 2. Using a teaspoon carve out the middle portion of each slice of tofu to create a small cave. 3. Fill up the cave of each slice of tofu with minced pork. 4. Add vegetable oil in a pan over medium heat. Place tofu with pork side down in pan to cook until golden brown. Then flip over to cook on the other side until golden brown. 5. Prepare a claypot, place Napa cabbage in the pot. Transfer tofu pieces from pan into claypot, placing them on top of the Napa cabbage. 6. Add water into claypot, ensure water level is just sufficient to cover all the tofu pieces. Bring to boil, then place the lid on. Simmer in low to medium heat for 20 mins. 7. Combine all gravy seasoning, pour over tofu in claypot. Allow to cook for another 2 mins. Garnish with green onions and add a good pinch of white pepper then remove from heat.   • It’s easy to get caught up with the “stuff” of a lower waste lifestyle - I need this and this to achieve a jar of waste. And yeah, some things do make life significantly easier. But one of the best things I’ve learnt on this lifestyle is how to be thrifty, in particular what to do with leftover food or food scraps 🌏 Don’t get me wrong, I still create food waste! But it’s a fraction of what it used to be! ♻️ One of the easiest things for me is giving another life to veggie scraps before they hit the compost. It takes about 1 month before I have enough scraps to create 2-3L of veggie stock, but it’s so much better than store bought - and it costs next to nothing to make as it’s just scraps of veggies. Plus, it’s actual veggies unlike some store-bought ones that contain artificial flavours and stabilisers 👌🏽 I normally just wait until I have a full bag of veggie scraps and throw it into a pot. I fill the pot with water until all the veggies are covered. I add one bay leaf, 1 tsp of salt and 1 tsp of pepper. I bring to a boil and let it simmer for 15 mins. I let it rest until it’s cooled down and strain! 😊 I like to freeze my veggie stock into an ice tray (1 cup for me equals 1 tray). This just makes it so much easier when cooking. Particularly, if you only need one or two cups of stock ✌🏽 Anywho, even after a year, I’m still amazed at how simple and cheap veggie stock is to make! You know, I’m a simple human and homemade veggie stock excites me! 🌏 👵🏼 #homebody #needtogetalife #cheapo #vegetablestock

  • Easy and healthy recipe you can try making at home!❤️ - Chicken Fajitas!😍🍗 - FOR THE MARINADE 1/2 c. plus 1 tbsp. extra-virgin olive oil 1/4 c. lime juice, from about 3 limes  2 tsp. cumin 1/2 tsp. crushed red pepper flakes 1 lb. boneless skinless chicken breasts Kosher salt Freshly ground black pepper 3 bell peppers, thinly sliced 1 large onion, thinly sliced Tortillas, for serving - Directions: In a large bowl, whisk together 1⁄2 cup oil, lime juice, cumin, and red pepper flakes. Season chicken with salt and pepper, then add to bowl and toss to coat. Let marinate in the fridge at least 30 minutes and up to 2 hours.  When ready to cook, heat remaining tablespoon oil in a large skillet over medium heat. Add chicken and cook until golden and cooked through, 8 minutes per side. Let rest 10 minutes, then slice into strips. Add bell peppers and onion to skillet and cook until soft, 5 minutes.   • Banana Gula Melaka Sponge Cake 150g cake flour 1 tsp baking powder (omit on 2nd bake) 1/2 tsp baking soda 120g banana (mashed) (can add up to 180g) 70g gula melaka syrup – boil 50g of gula melaka with 50g of water and reduce to about 70g 100g coconut oil (used only 70g for 2nd 5 yolks (from eggs with average weight of 75g with shell) 1/2 salt 5 whites 1/2 tsp cream of tartar 100g caster sugar Line bottom and grease sides of a 7″ square pan. You can also use an 8″ round pan, if you so wish. Preheat oven to 160C. Mash banana with a fork until very fine and add oil, yolks, salt, gula melaka syrup and using a hand whisk, mix the ingredients until even. Mix the baking powder and soda to the flour and sift this into the yolk mixture and mix until well combined. Do not over-mix. Set aside. In mixing bowl of your stand mixer, beat the egg white until foamy. Add in the cream tartar. Continue beating on medium speed while gradually adding the caster sugar. Continue beating until firm peak. Gently fold the meringue into the flour mixture in 2 to 3 portions until even. Pour into the prepared pan at a height. Give the pan a gentle tap on the work top to get rid of big bubbles. Place in a water bath and bake for 80 minutes at 160C.   • Cemilan tradisional kesukaanmu kini berbentuk kue! cc: @masaktv @a.wardojo BAHAN: 5 btr telur utuh  5 btr kuning telur 150 g gula 1 sdm ovalet 150 g terigu 25 g susu bubuk 150 g mentega 1-2 sdt pasta pandan Whipped cream Gula merah, cairkan Kelapa Parut . CARA MEMBUAT: 1. Panaskan oven di suhu 180°C 2. Mixer mentega hingga halus. 3. Masukkan gula, mixer ± 2-3 menit hingga tercampur rata.  4. Masukkan telur satu per satu, sambil dimixer. 5. Masukkan ovalet dan pasta pandan, mixer hingga tercampur rata. 6. Masukkan secara perlahan terigu dan susu bubuk sambil dimixer. 7. Jika adonan sudah tercampur, matikan mixer. Dengan spatula, aduk adonan kembali agar tercampur rata. 8. Alasi masing-masing loyang dengan kertas baking dan olesi sedikit mentega di permukaannya. 9. Tuang adonan ke dalam 3 loyang bulat. Panggang adonan selama 25-30 menit. . Cake Klepon: 1. Lapisi bagian atas pandan cake dengan whipped cream yang telah dikocok dan lumuri gula merah cair. 2. Ulangi hingga 3 lapisan.   • Nikmatilah Bolu kopi hangat yang diisi dengan krim espresso dan dilapisi dengan buttercream cokelat dan remah gula merah dan pecan. BAHAN: Bolu kopi: 4 butir telur 75 g gula kastor 3 sdm susu cair 3 sdm minyak  ½ sdt esens vanili 30 g tepung serbaguna, ayak 1 ½ sdt bubuk espresso 3 sdm tepung pati jagung ½ sdt krim tartar . CARA MEMBUAT: 1. Panaskan oven sampai 180 C.  2. Dalam mangkuk, aduk kuning telur dan 3 sdm gula sampai gula larut. Tambahakn susu, minyak sayur, dan vanili, aduk rata. Ayak tepung, bubuk espresso dan tepung pati jagung bersamaan dan aduk rata. 3. Dalam mangkuk standing mixer, kocok putih telur sampai berbusa, dan masukkan krim tartar. Lalu, kocok dengan kecepatan sedang-rendah selama 2 menit, dan secara bertahap, masukkan sisa gula. Kocok dengan kecepatan sedang-tinggi sampai kaku. Lalu, secara perlahan, aduk campuran putih telur ke dalam campuran kuning telur. 4. Tuangkan adonan ke loyang. Ketuk loyang di atas meja untuk menghindari gelembung udara. Panggang selama 20-25 menit hingga mengembang. Untuk menandakan matang, kue harus memantul saat disentuh. Keluarkan loyang dan dinginkan kue di rak kawat sambil tetap ditutupi handuk. 5. You’ll love it! 🌶 ½ cup quinoa 🌶 ½ cup brown lentils 🌶 1 medium onion, diced 🌶 1 large carrot, diced 🌶 Splash olive oil, extra-virgin 🌶 1 ¼ cups red salsa, divided 🌶 ½ cup corn kernels 🌶 2 garlic cloves, minced 🌶 ½ tsp each: black pepper, salt and cumin 🌶 4 oz mozzarella cheese 🌶 8 medium poblano peppers 1. Separately, cook quinoa and lentils according to thee directions on their packaging. Drain well. 2. Meanwhile, combine onions, carrots, and a splash of olive oil in a large skillet. Saute for 10 minutes, or until carrots are tender. 3. Preheat oven to 350 F. 4. Combine quinoa, lentils, onions, and carrots with ¾ cup red salsa, corn, garlic, black pepper, salt, cumin, and 3 oz cheese. 5. Cut a slit down the center of each pepper and remove the seeds. Stuff each pepper with enough quinoa mixture so that the seam opens up a little. 6. Spread remaining salsa into the bottom of a 9x13 inch glass baking pan. BAHAN: Puding beras: 120 g beras  600 ml susu 120 ml air 100 g gula ¼ sdt garam 2 batang kayu manis 120 ml kental manis . Lapisan Arancini: 250 g tepung serbaguna 2 butir telur, kocok 140 g biskuit Marie, hancurkan Minyak untuk menggoreng Campuran gula kayu manis . CARA MEMBUAT: 1. Dalam panci ukuran sedang, campur beras, susu, air, gula, garam, dan batang kayu manis. Tutup dan perlahan didihkan, di atas api sedang, sampai mendidih. Didihkan selama 25 menit dan masukkan susu kental manis. Didihkan perlahan selama 10 menit dan langsung dinginkan. 2. Biarkan campuran mendingin dan bentuk menjadi bola bulat berukuran 1.5 inci. Lapisi setiap bola dalam tepung, lalu telur dan terakhir dalam remah biskuit. Letakkan semua bola yang telah dilapisidi atas loyang dan dinginkan setidaknya selama satu jam atau semalam. 3. Isi panci yang dasarnya bertebal 2-3 inci dengan minyak canola, panaskan sampai bersuhu 180℃. Goreng 3-4 bola setiap kali, pastikan untuk sering memutar bola, dalam waktu memasak selama kira-kira 3 menit atau sampai cokelat keemasan. Hangatkan setelah matang. Tiriskan dan segera gulingkan dalam campuran gula kayu manis. 4. Dalam panci kecil, campur susu, keping coklat, gula, dan garam.   • New recipe for dinner! . 4 boneless skinless chicken breasts 4 medium-large potatoes Olive oil Equal parts salt, pepper, smoked paprika, Italian seasoning, savory Half part cayenne pepper Broccoli, cut into small florets . Preheat oven to 450F. Cut potatoes into nice sizes. Coat chicken on all sides with olive oil & half of spice mixture. Lay out on baking tray. Coat potatoes in olive oil & remaining spices. Lay out between chicken breasts. Bake 25-30 minutes. Let rest out of oven 10 minutes. While it’s resting, steam broccoli in small saucepan with small amount of boiling water & lid (5 minutes or so). This is a good time to steep some tea for dinner, too - I chose peppermint with almond milk. . I ate half a chicken breast, so that left me 7 leftover chicken servings (froze 5, refrigerated 2), 3 potato servings, 1 broccoli serving. . Ingredients: (Makes 24 Cupcakes) 1 Yellow Cake Mix (Pillsbury w/pudding) 3 Eggs1 tsp Vanilla 1/3 cup Sour Cream 1 cup Milk 1/3 cup Vegetable Oil 24 Golden Oreos . . Preheat oven to 350 F. Line cupcake pan with liners, place 1 Golden Oreo in each liner. Combine all ingredients in a large bowl (add sprinkles for the Funfetti). Scoop 1 (more if needed) tablespoon of batter to each cupcake liner (make sure a Golden Oreo is at the bottom!). Bake for 20-25 minutes until a toothpick comes out clean. . . .   • New side dish: Sweet and Spicy Brussels Sprouts 😋 RECIPE: 1 1/2 lbs of Brussels Sprouts 3 TBS Olive Oil 2 cloves of minced fresh garlic 1-2 TBS of crushed red pepper flakes (depends on the level of spice you desire) 1 TBS lemon juice 2 TBS honey 3 strips of bacon, diced well. Add to pan on stove, at medium heat, cook for 1 minute (it will finish cooking in the oven) Salt and pepper Preheat oven to 400 degrees. Wash and pat dry Brussels sprouts. Be sure to cut the ends off, but not too much or else they will fall apart. Add all of the ingredients, except the sprouts, to a large bowl. Whisk ingredients well, add sprouts and fold until well coated. Add to baking sheet and bake until desired crunchiness (20-25 minutes)
