  • I got a big package of high-quality tropical fruits from @jurassicfruit 😍 Unfortunately the durian wasn’t so good (or @scorpionmind and I just didn’t like it 😅) but besides that, the rest was super delicious and so fun to try. My favorite was the mango and papaya and most fun was eating fresh jackfruit 😄 Many of you told me that you can even boil the seeds which I’ll try next time. Tonight’s plates: Sriracha Brussels sprouts, broccolini topped with pickled onion and almonds, foccacia bread, roasted carrots, Mac and cheese (🔥🔥🔥), and a “sausage” flatbread. The desserts here are probably bomb too but we didn’t have any room left after dinner 😅. #whatveganseat

It was huge and filling and only $6.75! * Buds is an all vegan establishment in Salt Lake City with the best sandwiches (I also got the cheesesteak and absolutely loved it). And they had my order ready in two minutes! I was super impressed and will definitely be back. I am really excited about the up and coming vegan scene in Utah 🌱

  • 🌱 Homemade Baked Beans 🌱 • Sometimes a hearty cooked breakfast is needed on a Sunday morning. Can’t go further then making homemade baked beans on few pieces of thick ciabatta and avocado • Ingredients - - 2 x cans of cannellini beans - 1 x can of chopped tomatoes - 2 x cups mushrooms - 1 x onion - 2 x oxo veggie stock cubes - 2 tsp crushed garlic - 2 tsp mixed herbs - 1/2 avocado - 2 slices of ciabatta loaf - 1Tbsp coconut oil • Method 1. Add coconut oil to heated wok then add chopped onion, sliced mushrooms and garlic. Fry for 5 mins 2. Strain cannellini beans then add to the wok with mixed herbs 3. Crush oxo veggie cubes into a small jug then add 1 cup of boiling hot water. Mix together until cubes have dissolved. (Should be a gravy texture). Pour into wok and stir for 2 mins 4. Add canned tomato and turn element to low. Let the mixture simmer for 5mins so all the flavours combine together. Add salt and pepper if required 5. While mixture is simmering, cut two thick slices of ciabatta loaf. Place pieces of toast into sandwich maker. Once toasted, add olivani and avocado 6. Top the ciabatta toast with bean mixture • Enjoy fam - this is a real good recipe to know. Something different from the usual canned baked beans but is packed with super flavour😋🙏🌿✨ #Goodness

  • At the age of 55 with a demanding full-time job and family obligations, it is often difficult to maintain a healthy diet and a regular exercise routine. 🌱😲🌱 * I have been making a special effort to eat better and work out more frequently over the last three weeks. I can feel the difference in my energy levels and my overall state of mind. I have found that a healthy diet and regular exercise along with a decent night’s sleep better equip me for a stressful day at work and allow me to be more productive during my free time. It’s challenging, and I love using the sliders and resistance loops, as well as weights. This program is focused on abs and booty, but it really is a total body program.   • Not my fastest pace, but one of my more satisfying runs this year. First, my long runs are increasing, and my foot feels fantastic! Not an issue at all. Yay. Second, this run started out tough. While my legs felt great (I got cupping done last night), I was overall super tired. Due to evening commitments, It was my fifth day in a row of having to get up between 4 and 4:30 am to get my workouts done. The first half was definitely a struggle, but once my body woke up, it ended up a progressive run with my fastest miles at mile 11 and 12! Paces: 9:27, 9:03, 8:51, 9:01, 9:00, 8:58, 8:56, 8:44, 8:41, 8:33, 8:13, 8:17. Felt good to grind this one out. 🏃🏾‍♀️🌱 #run #vegan #nuunlife #beatyesterday #igrunners #runhappy
