  • Stuffed Shells with cashew ricotta and kale by @veggies.fruits.grains 💚 Recipe: Ingredients: 1. For the parboil medium sized shells: drizzle with olive oil and set aside to cool 2. sauté 1/2 large onion, one bunch of dinosaur/lacinato kale stemmed and finely chopped, 1/2 tsp each salt, pepper, garlic powder, onion powder. when softened set aside to cool. . For the Cashew Ricotta: Put 1 1/2 cups cashews soaked in water for a few hours, drain and add to blender with 1/2 cup of water, blend until creamy. Then add: 1 Tbsp apple cider vinegar 2 Tbsp fresh lemon juice 1 tsp white miso 1/2 tsp garlic powder 1/2 tsp salt 1/2 tsp black pepper blend until combined I like the texture to be creamy ( you can double this recipe and use it for lasagna ) . start adding creamy cashew ricotta to the sautéed kale mixture a bit at a time until you get a nice ratio. you may have some left over and that’s ok because it works as a dip too. . For the last part: in a large baking dish pour 1 jar of store bought red sauce double up the shells and start filling them placing them open side up in the baking dish cover with foil and bake at 350F for 20 mins remove the foil and broil for 1 minute sprinkle on some red pepper flakes and fresh parsley before serving. Enjoy!

A lot of our food has been turned into processed, packaged, convenient & fast food for our busy lifestyles. Those processed foods are actually a large contributor to chronic diseases. Even if you eat a lot of vegetables and have a well balanced diet our bodies are just not getting enough nutrients to support a healthy well balanced immune system in order to fight off disease and illness. Sadly, each successive generation of fast-growing, pest-resistant fruits and vegetables is truly less good for you than the one before. Efforts to breed new varieties of crops that provide greater yield, pest resistance and climate adaptability have allowed crops to grow bigger and more rapidly, but their ability to manufacture or uptake nutrients has not kept pace with their rapid growth. ......................... Mix with a little salt, leave for 5 min, then squeeze or massage lightly, you don’t use the “juice”, mix with oatflour apple vinegar and pepper. Form small röstis and fry on medium heat in olive oil. Serve with kale (here red and Green), which has been dipped in boiling water, cut very fine, marinated in a little lemon and salt and with a little tomatorelish. #rösti #potatoe

  • Happy Monday guys 🙌🏻 This week is going to be a good week ✌🏻 I started the day and week by going to the gym (arms, shoulders and back session) and now I’m drinking my all time favourite breakfast smoothie 😜 What did you guys get up to on the weekend? 🌸 I finished my weekend by doing the grocery shopping and stocking up for the week. I don’t always do it, sometimes I might end up buying groceries every day, but personally I prefer to be organised and make things easier in the long run!   • Let's talk vanilla extract...Real vanilla extract, the good stuff, is pricey. The cheap stuff is often imitation and really not good for you. Plus there’s the fact that some vanilla extracts have sugar or corn syrup added to them. Not really want you want to use when making lovely food from scratch. ⠀  The good news? Homemade vanilla extract is superb and very inexpensive to make! The downside, it takes about 8 weeks to make... so make it NOW if you want it to be basically ready by Christmas (you can probably get away with using it at 6 weeks). ⠀  Or you can get one started and give it as a holiday gift!   • Creamy Pumpkin Soup 🍂 . Okay, I will admit I was skeptical. But, this soup was delicious! . I used a fresh baked pie pumpkin to make this soup, and I think it made all the difference. Simply cut a pie pumpkin and half, scoop out the guts, flip face down on a baking sheet and put in the oven on 425 degrees for about 30 minutes. Scoop the flesh out, and put in a food processor until velvety smooth. . Sautee a couple onions until caramelized, add a few cloves of minced garlic, cinnamon, cayenne pepper, Ginger, salt and pepper. Add four cups of low sodium chicken stock, and 30 oz of fresh pureed pumpkin. I can’t take full credit of this recipe, you’ve probably seen it all over Pinterest. BUT this has to be my favorite side dish to have during my Thanksgiving feast! With savory Brussels sprouts, sweet cinnamony butternut squash, nutty pecans, and tart cranberries, it’s the perfect sweet and savory combo you need! Eat it alone, or place on top of a bed of peppery arugula. My personal fave: topping it with a mustardy vinaigrette! I mix whole grain mustard, avocado oil, and apple cider vinegar for a tangy kick! Seriously soooo guuud 🤤 ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Ingredients: 2 cups Brussels sprouts (cut in half) 3 cups butter squash (I actually buy the precut from @traderjoes I KNOW THE PLASTIC but it saves ya gurl some time) 1/2 cup pecans 1/2 cup dried cranberries 1/4 cup @chosenfoods avocado (divided into 2 tbsp) 1/2 tbsp cinnamon 1 tsp Himalayan salt 1 tsp black pepper ⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Directions: preheat oven to 375 F + coat halved Brussels sprouts with 2 tbsp avocado oil, salt, and pepper + place on parchment lined baking sheet + coat butternut squash in 2 tbsp avocado oil and cinnamon + please on parchment lined baking sheet + place both baking sheets in heated oven + roast for 25 minutes + once cooked place both veggies in a large bowl, add in pecans and cranberries + lightly toss together and ennjjjooyy 🥰

  • Have you heard? It's now Wintertime in Virginia! I'm very grateful for my health, and for my reliable vehicle- may I never take either for granted. I had a close call on both fronts this morning, as I drove towards work on a slushy highway. Let's just say today might easily have begun and ended very differently from what I've become used to. I'm here and I'm happy, coming home to some hot soup and my fireside. You might take a moment to consider your daily blessings- we don't always notice that we've woken up once again, at home, in proximity to those we love. Perhaps we all want more than that, and we can surely have it. Let's remember though that the greatest strength always comes from the foundation.
